自然条件下游离的花青素极少见,3,5-碳位上常与一个或多个葡萄糖、鼠李糖、半乳糖、木糖、阿拉伯糖等结合成糖配体,以糖苷形式存在,称为花色苷(Anthocyanin)。花色苷中的糖苷基和羟基还可以与一个或几个分子的香豆酸、阿魏酸、咖啡酸、对羟基苯甲酸等芳香酸和脂肪酸通过酯键形成酰基化的花色苷。已知天然存在的花色苷有250多种,存在于27个科、73个属的植物中。植物中含花色苷少的仅1种,如黑莓,多的达21种。
